Non-centrifugal cane sugar : ウィキペディア英語版 | Non-centrifugal cane sugar Non-centrifugal cane sugar (NCS) is the technical name given to traditional raw sugar obtained by evaporating water from sugarcane juice. NCS is internationally recognized as a discrete and unique product by the FAO〔(【引用サイトリンク】url=http://data.fao.org/dimension-member?entryId=3e29a4b1-a142-470c-9077-10d7f9a5c8ea )〕 since 1964 and by the World Customs Organization (WCO) since 2007. WCO defines NCS as “cane sugar obtained without centrifugation". It also states that "the product contains only natural anhedral microcrystals, of irregular shape, not visible to the naked eye, which are surrounded by residues of molasses and other constituents of sugar cane”. NCS is produced in most sugarcane growing regions of the world, being known by many different names such as panela, jaggery, gur or muscovado.〔(【引用サイトリンク】url=http://www.panelamonitor.org/media/docrepo/document/files/definition-and-classification-of-commodities-sugars-fao.pdf )〕〔(【引用サイトリンク】url=http://www.panelamonitor.org/media/docrepo/document/files/harmonized-commodity-description-and-coding-system-0417-2012e-chapter-17.pdf )〕 ==Composition== NCS contains over 90% carbohydrate, sucrose being by large (near 80%) the predominant sugar.〔(【引用サイトリンク】url=http://www.ccbolgroup.com/chancacaE.html )〕 It also contains minerals (up to 3%), mainly calcium, potassium, sodium, chloride and phosphates, but also a number of essential nutrients or oligo-elements〔(【引用サイトリンク】url=https://fr.wikipedia.org/wiki/Oligo-%C3%A9l%C3%A9ment )〕 including iron, zinc, magnesium, copper, cobalt, nickel and chromium.〔(【引用サイトリンク】url=http://www.panelamonitor.org/content/3/what-is-panela/ )〕 The particular chemical composition of NCS depends on the cane variety used, the soils on which it was grown, the fertilization applied and the processing methods.
